Last week my daughter and I were re-watching the Anne of Green Gables movies....Now, I know there are different versions out there, but for me there is only one....the one with Meagan Follows and Jonathan Crombie. What is one of the things Ann"with and e" talks a lot about? Kindred Spirits! As an adult, I've really come to understand the concept of kindred spirits and there are not many in our lives. Anne Shirley and Diana Berry were very close friends in Anne of Green Gables...in fact they were almost as close as sisters. They had fun together, they went through sorrow together, they had silly moments and always understood each other. The Lord has certainly blessed my life with a great collection of kindred spirits.
This past week I was invited to a kindred spirit's house to play board games and enjoy a meal together with a few other ladies. There would be no husbands and my kiddos were going to play with her kiddo so the ladies could enjoy time together. Everybody was to bring something to eat. I signed up to bring a Papa Murphy's pizza (which was awesome since it turned out to be ten dollar Tuesday) and then while watching Valerie Bertinelli on the Food Network, I decided to make her recipe for Blueberry Cheesecake Filo Cups. I love filo dough, it's so crispy and light! I really enjoyed the recipe for this dessert....and it was so very easy to make. I made two versions, first I made it the way Valerie did....the recipe is at the end of this article. The second version instead of adding lemon juice, I added melted dark chocolate chips. For the garnish, instead of using the fruit, I took my veggie peeler and made curly chocolate out of a dark chocolate candy bar. By the way, I am very particular when I am choosing my chocolate. Rarely do I use Nestle or Hershey.....I like to go for high quality chocolates. I did make sure to leave a couple cheesecake cups behind for my husband to enjoy, since he's a great guy!
That evening was so uplifting and rejuvenating! I didn't win any games, but there was such laughter and fellowship. There is something to be said about being with kindred spirits. You can be yourself without the fear of them misusing your heart. Even the Lord Jesus had his close friends. He'd be ministering to crowds of people, but would always go back to his 12 disciples and in particular to his closest disciple, John. Close friendships are important....nourish them and hold your friends close.

Blueberry Cheesecake Filo Cups

Yield: 15 mini cheesecakes
1 cup fresh blueberries
1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
1/2 cup mascarpone cheese
2 tablespoons powdered sugar, plus more for dusting
1/2 teaspoon grated lemon zest plus 2 tablespoons lemon juice, plus more zest, for garnish
One 1.9-ounce package mini phyllo (filo) shells
Combine the blueberries, granulated sugar and cinnamon in a small saucepan. Cook over medium-high heat until the berries start to break down and the liquid becomes syrupy, about 10 minutes. Remove from the heat and let cool to room temperature, 25 to 30 minutes.
Whisk together the mascarpone, powdered sugar and lemon zest and juice in a medium bowl.
Spoon or pipe dollops of the mascarpone mixture into the phyllo shells, leaving room for the blueberry compote, then top with the blueberry compote. Freshly grate lemon zest on top to garnish and dust with powdered sugar just before serving.
